Ingredients for the recipe

For 3 calzels of medium size

dough

  • 1 small cauliflower, cut into small florets
  • 50 g mozzarella, grated
  • 1 egg, lightly beaten
  • ½ teaspoon fine-grained sea salt
  • ½ teaspoon of oregano
  • ¼ teaspoon ground black pepper

filling

  • 6 tablespoons thick tomato sauce
  • 50 g mozzarella
  • pinch of salt

 

preparation

  • Preheat the oven to 220 ° C.
  • Lay out a baking tray with baking paper and lightly grease with olive oil.
  • In a food processor crush the cauliflower florets, but it should still be recognizable pieces, no Mus.
  • Cook the shredded cauliflower in the microwave for 8 minutes.
  • Place the cooked cauliflower in a kitchen towel and squeeze out as much liquid as possible. The mass should be as dry as possible. This is very important to make the dough crispy and not mushy.
  • Put the cauliflower mass in a bowl. Add the egg, mozzarella and spices. Mix everything well.
  • Put the mixture in 3 portions on the baking sheet and shape with your hands into 3 flat roundels. Bake in the oven for 10 minutes.
  • Remove from the oven and add to half of each serving of tomato sauce, mozzarella and salt. Using a spatula, carefully lift the half with no filling on it and place it on the filled side (see photos).
  • Bake for another 12 minutes.
