A summer salad of marinated chicken breast, perfect for the protein kick on warm days!

Ingredients for the recipe

  • 200g chicken breast
  • 15g pine nuts
  • 1 teaspoon and 1 tablespoon of olive oil
  • 1 tablespoon of vinegar
  • 1 handful of fresh basil
  • ½ teaspoon chilli powder
  • salt
  • pepper
  • 15g Parmesan in pieces


  • Chop the chicken breast into small pieces and sauté in a pan with a little oil (1 tsp).
  • Chop the fresh basil and place in a large bowl with olive oil, vinegar, chili, salt and pepper.
  • Roast the pine nuts in a frying pan without fat and then add to the dish for dressing.
  • The fried chicken pieces still warm in the dressing, so the flavors are particularly well received!
  • Mix the salad well and leave for at least half an hour or overnight. Finally add the Parmesan and mix for the last time.
  • Of course, the recipe can also be doubled for more protein!

Tip:  For those in a hurry, this recipe also works with ready roasted chicken breast pieces and no exposure time.
